Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 pounds Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
  • 4 cups low-sodium vegetable broth
  • 2 teaspoons Breeze Blends Veggie Blend, plus more to taste
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh chives, optional garnish

Instructions

  1. Soften the onion. Melt the butter in a large pot over medium heat. Add the diced onion and cook for 5 minutes, stirring occasionally, until softened.
  2. Simmer the potatoes. Add the potatoes, vegetable broth, and 2 teaspoons Veggie Blend. Bring to a boil, then reduce the heat and simmer gently, partially covered, for 15–20 minutes, until the potatoes are fork-tender.
  3. Thicken the soup. Use a potato masher to mash some of the potatoes directly in the pot, leaving plenty of chunks. For a smoother soup, carefully use an immersion blender to partially blend it.
  4. Add milk and cream. Stir in the milk and heavy cream. Warm over low heat for 3–5 minutes without boiling. If the soup is too thick, add a splash of broth.
  5. Season and serve. Taste before adding more seasoning because Veggie Blend contains sea salt. Adjust to taste and serve topped with chopped chives, if desired.

Tips for Creamy Potato Soup

Cut the potatoes into even pieces so they cook at a similar rate. Mash more potatoes for a thicker soup, or add a little broth for a thinner consistency. Keep the heat low after adding the dairy to help prevent it from separating.
