#1 Cozy Fall Recipe to Warm Your Soul

One of our favorite fall recipes is Chicken Tortilla Soup! Nothing makes your home smell better than a big pot of this soup simmering all day in the crock pot! My family and I will start this mid-morning and enjoy the day together watching football.

This recipe is wonderful to serve for large gatherings as it will make an entire crock pot full! You can always adjust the recipe if you are cooking for fewer people – or enjoy it for lunches at work.

We used 2 different Gluten-free Seasoning Blends in this recipe. The Poultry Blend was used to prepare the chicken breast. The Southwest Blend was used in the crockpot to season the soup.

The Poultry Blend is a savory combination of sea salt, paprika, black pepper and garlic. It really adds warmth and flavor to the chicken.

The Southwest Blend adds a bold flavor to the soup with a mixture of chili powder, cumin, paprika, sea salt, garlic, onion, and black pepper. Just a slight kick --- not too hot.

Chicken Tortilla Soup

Ingredients

  • 1 lb cooked shredded chicken (cooked with Breeze Blends Poultry Seasoning)
  • 15 oz canned peeled crushed tomatoes 
  • 10 oz can green enchilada sauce
  • ½ medium onion chopped
  • 4 oz can chopped green chili
  • 2 cloves minced garlic
  • 2 c water
  • 32 oz can chicken broth
  • 3 Tbsp Breeze Blends Southwest Seasoning
  • 1 bay leaf
  • 10 oz package frozen corn
  • 3 Tbsp chopped fresh cilantro

Directions

Place all ingredients in slow cooker. 
Stir and cover.
Cook on low heat 6-8 hours or
Cook on high heat 3-4 hours
Optional: garnish with sour cream, shredded cheese, tortilla chips
